Chocolate Marshmallow Cake Recipe Review

What can go wrong when you pair chocolate cake, mini marshmallows and boiled chocolate icing?
Absolutely nothing. This recipe, from The Kitchen is My Playground, is an absolute dream.
First, you make a devil’s food cake.
Then, you pour mini marshmallows on top while you make boiled icing.

I was fascinated with how it melted while I watched.

Boiling sugar mixtures always make me nervous and a little crazy, but it went well…I think.
Here are some pictures of the sugar, butter, and evaporated milk boiling.



After, it boils for 30 seconds, you add the vanilla and chocolate chips and whisk it until smooth.


Here is where I encountered a problem….as I poured the oh so delicious (gets more delicious by the day) boiled icing over the marshmallows, they expanded! And I had icing running over the sides in the center of the dish. After some adjusting, I just made sure to cover all the marshmallows. (At some point during the pouring you are supposed to smooth it with a spatula, but I already had an amazing, chocolate-y mess and didn't want to clean more stuff up...long story short-pour a little, smooth a little, repeat)

It is not as pretty as the one from The Kitchen is My Playground, it is beyond delicious and very quick and easy to make!!!! Click here for the recipe.
