A campfire favorite at home: Foil Pack Burgers

This week is the annual Online Camp Week for the summer camp I attended growing up.

Full of nostalgia, I get to relive some of the best weeks of my young life online through Facebook. We do daily bunk checks, play with our leftover food (see photo below), play the Tuesday night game and on Wednesdays, we remember the days of hiking to a remote location and sleeping under the stars.

The best part of Overnights was a dinner cooked on the campfire and s'mores.

During online camp week in the middle of March, its a little difficult to get a campfire going, so a lot of us turn to the oven.

Here is my recipe:

Hamburger patties

Sliced Potatoes

Diced Onions

Shredded carrots

Salt and Pepper

Get creative-add celery or other veggies or other seasonings

Preheat the oven to 450 degrees.

Tear large pieces of foil for each burger.

Spray some butter spray in the center of the foil.

Use the potatoes to create a cooking surface for the burger. Make sure to overlap the potatoes. Add onions and shredded carrots. Season with salt and pepper (and any other seasoning you are using). Place the burger on top and season again. I like to top the burger with onion as well.

This next step is crucial...fold the sides over the burger and make an air tight seal. Crimp the open ends and gently twist the foil to seal. Make sure not to rip the foil.

Place in the oven and cook for 35-45 minutes depending on the size of the burger.

After cooking, carefully open and put the burger on a bun. Dress as needed. Eat the potatoes and other veggies as the side dish.
