Recipe Review: Italian Rum Cake

My husband was over the moon when I told him I was making Italian Rum Cake and then asked him to stop at the liquor store for dark rum!

The cake part was easy. But I would advise to carefully grease the pan...I had a little trouble getting the cake out, but that was because of my over-confidence in my greasing ability.

For the glaze...follow the instructions to the letter...stir. The glaze wasn't difficult, but I was expecting more of an icing type glaze...what I ended up with was sugary rum liquid to pour over the cake...not a bad thing, I just always like icing.

We loved the cake...my husband more so than myself. I found the rum a bit strong, but I am the kind of drinker who likes strong drinks but they have to be well masked...LIITs, whatever the tequila drink my BFFs husband made night one of #OBX2016, fuzzy navels, etc.

I am adding this to our New Years's party recipes!
