Recipe Review: Meatball and Tortellini Soup

I love quick, easy, tasty recipes and this is definitely one of them!
This recipe is from Spicy Southern Kitchen. I did not alter this recipe except I used 2% milk instead of heavy cream (I even used the store bought frozen meatballs!)
It took me literally 30 minutes from deciding it was time to make dinner to the time we were eating it.
First,you heat olive oil and then soften a diced onion. Then you add in minced garlic, beef broth, oregano, salt, diced tomatoes, tomato sauce and meatballs.

After you let that simmer for 15 or so minutes, you add in the tortellini and simmer a few minutes until they are al dente.

Then you add in spinach and cream and let the spinach wilt.

Delicious. Quick. And the leftovers are good too!
