Recipe: Roasted Kielbasa and Veggies

I will be honest, I read a recipe somewhere that I can't find now that called for roasting your kielbasa and I was so intrigued! I'm relatively new to kielbasa because my family butchers and we always had ground sausage links. So, in my trials of kielbasa, I've always sliced it, browned it on the stove and sauteed my other ingredients.
So, to make this recipe you need to pre-heat your oven to 425 degrees and line a baking sheet with aluminum foil.
Then, slice your kielbasa into 3/4 inch-1 inch bites. Dice your veggies into bite sized pieces. Put the kielbasa and veggies on the lined baking sheet.

Then, drizzle with olive oil (or your preferred oil). Season to taste with salt, pepper and Italian seasoning. Mix together to get the oil and seasonings on all the pieces.

Put in the oven and bake for 18-22 minutes depending on your oven and taste, I usually bake for 20 minutes. The carrots are usually just short of soft at that point which is how we like them.
I love this recipe because I can take kielbasa and whatever fresh veggies I have an abundance of in my refrigerator and make a meal out of it that takes about 5 minutes to toss together and 20 minutes to cook and dinner is on the table.

In these pictures I have broccoli florets, carrot sticks, and butternut squash. We have also done it with onions and zucchini and carrots (I always have a lot of carrots prepped). You could also add a diced potato or sweet potato.
The roasting of the kielbasa brings out the flavors of the kielbasa in a completely different way than sauteing it does.
Roasted Kielbasa and Veggies
1 loop of your preferred kielbasa
Assortment of veggies to feed your family
Olive Oil
Salt
Pepper
Italian Seasoning
1. Preheat oven to 425 degrees and line a baking sheet with aluminum foil.
2. Slice Kielbasa into bite size pieces.
3. Dice veggies into bite size pieces.
4. Place kielbasa and veggies on baking sheet.
5. Drizzle with Olive Oil. Season to taste with salt, pepper and Italian seasoning.
6. Bake for 18-22 minutes, until veggies are fork tender.
7. Serve as is or with rice or noodles.
